Instructions:
- Prepare the Simple Syrup:
- In a medium saucepan, combine the sugar and water.
- Place the saucepan over medium heat and stir until the sugar has completely dissolved.
- Once dissolved, remove the saucepan from heat and allow the simple syrup to cool to room temperature.
- Add Lemon Components:
- Once the simple syrup has cooled, stir in the freshly squeezed lemon juice and finely grated lemon zest.

- Freeze the Mixture:

- Scrape to Form Granita:

- Using a fork, scrape the ice crystals from the edges towards the center.
- Return the dish to the freezer.
- Repeat this scraping process every 30 minutes for about 2 to 3 hours, or until the entire mixture has transformed into fluffy, granular ice crystals.
- Serve:
- Once the granita has reached the desired consistency, fluff it with a fork to break up any large ice clumps.
- Spoon the granita into chilled serving glasses or bowls.
- Garnish with fresh mint leaves if desired.
